എസ്റ്റർ

ആൽക്കഹോൾ ഒരു ഓർഗാനിക് അമ്ലവുമായോ ഇൻ-ഓർഗാനിക്ക് അമ്ലവുമായോ പ്രവർത്തിച്ച് ഉണ്ടാകുന്ന പദാർത്ഥമാണ് എസ്റ്റർ. ഇതിന് പഴങ്ങളുടേയും പുഷ്പങ്ങളുടേയും സ്വാഭാവിക ഗന്ധം ഉണ്ടാകും. നിറമില്ലാത്ത ദ്രാവകമാണ് എസ്റ്റർ. ബ്യൂട്ടൈൽ അസറ്റേറ്റ്, അമൈൽ അസറ്റേറ്റ് എന്നിവ ഏത്തപ്പഴത്തിന്റെ ഗന്ധമുള്ള എസ്റ്റർ ആണ്. മെഥിൽ ബ്യൂട്ടിറേറ്റിന് പഴുത്ത കൈതച്ചക്കയുടെ ഗന്ധമാണ്. ബെൻസിൽ അസറ്റേറ്റിന് മുല്ലപ്പൂവ്, സ്ട്രോബറി തുടങ്ങിയവയുടെ ഗന്ധം ഉണ്ടാക്കാൻ കഴിയും. കൃതൃമമായി സുഗന്ധവും മറ്റും ഉണ്ടാക്കാൻ എസ്റ്ററുകൾ വ്യാപകമായി ഉപയോഗിക്കപ്പെടുന്നു. ഗാഢതക്കനുസരിച്ച് ഗന്ധത്തിന് വ്യതിയാനം സംഭവിക്കാം.
