ഭക്ഷ്യവസ്തുക്കൾക്ക് മധുരം നൽകുന്നതിന് ഉപയോഗിക്കുന്ന ഒരു കൃത്രിമ മധുരപദാർത്ഥം ആണ് സാക്കറിൻ (saccharin). ഇതൊരു ഊർജ്ജദായക പദാർത്ഥമല്ല . സൂക്രോസിനെ അപേക്ഷിച്ച് നാനൂറ് മടങ്ങ് വരെ മാധുര്യം നൽകുന്നു. എന്നാൽ, അളവ് കൂടിയാൽ കയ്പ് അല്ലെങ്കിൽ ലോഹ രുചിയുണ്ടാക്കുന്നു. ശീതളപാനീയങ്ങൾ, കാൻഡി, മിഠായി, മരുന്നുകൾ എന്നിവയ്ക്ക് മാധുര്യം നൽകാൻ ഇത് ഉപയോഗിക്കുന്നു[3].

പേരിന് പിന്നിൽ തിരുത്തുക

"Unpleasantly over-polite" എന്ന അർത്ഥം വരുന്ന, ഗ്രീക്ക് ഭാഷയിലെ σάκχαρον (sakkharon) എന്ന പദത്തിൽ നിന്നാണ് സാക്കറിൻ എന്ന പേര് വന്നത്[4],[5].

സാക്കറിൻ താപമേൽക്കുമ്പോൾ സ്ഥിരത കാണിക്കുന്നു[6]. മറ്റ് ഭക്ഷ്യഘടകങ്ങളുമായി രാസപ്രവർത്തനത്തിലേർപ്പെടുന്നില്ല. ഈ സവിശേഷതകൾ ഉള്ളതിനാൽ, മറ്റ് മധുര പദാർത്ഥങ്ങളോടൊപ്പം ചേർത്ത് ഉപയോഗിക്കാറുണ്ട്.

1970 കാലഘട്ടത്തിൽ, എലികളിൽ നടത്തിയ പരീക്ഷണങ്ങളിൽ, സാക്കറിൻ രോഗകാരിയെന്ന നിഗമനത്തിലെത്തിയിരുന്നു. ബ്ലാഡർ കാൻസർ ഉണ്ടാകാൻ ഇതിന്റെ ഉപയോഗം കാരണമാകുന്നു എന്നായിരുന്നു കണ്ടെത്തൽ.[7] എന്നാൽ പിൽക്കാല ഗവേഷണങ്ങളിൽ സാക്കറിൻ മനുഷ്യരിൽ കാൻസറുണ്ടാക്കാൻ കാരണമാകുന്നില്ല എന്ന നിഗമനങ്ങളിലെത്തി[7] .[7][8],[9] സാക്കറിൻ ഊർജ്ജദായകമമോ പോഷകസമ്പന്നമോ അല്ല. അതിനാൽത്തന്നെ ഡയബറ്റിസ് രോഗികൾക്ക് ഇത് ഉപയോഗപ്രദമാകുന്നു[10],[11][12]

1879 ൽ, കോൺസ്റ്റാന്റിൻ ഫാൽബെർഗ് എന്ന രസതന്ത്രജ്ഞനാണ് സാക്കറിൻ ആദ്യമായി നിർമ്മിച്ചത്. ഹോപ്കിൻസ് സർവകലാശാലയിൽ, ഇറാ റെംസണിന്റെ പരീക്ഷണശാലയിൽ ആയിരുന്നു ഗവേഷണം . ബെൻസോയിക് സൾഫിമൈഡ് ഉപയോഗിച്ച് പരീക്ഷണങ്ങൾ തുടരവേ, കയ്യിൽ പുരണ്ട ഒരു പദാർത്ഥത്തിന്റെ മാധുര്യമാണ് പ്രത്യേക ശ്രദ്ധയ്ക്ക് കാരണം. ഈ കണ്ടുപിടിത്തത്തിന്റെ പേറ്റന്റ് നേടിയ ഫാൽബെർഗ്, സാക്കറിൻ നിർമ്മാണത്തിലൂടെ അതിസമ്പന്നനായി[13][14]

In 1950ൽ മറ്റൊരു മാർഗ്ഗത്തിലും സാക്കറിൻ നിർമ്മിച്ചു. മീഥൈൽ ആന്ത്രാനിലേറ്റ് നൈട്രസ് ആസിഡുമായി പ്രവർത്തിപ്പിച്ചാണ് ഇത് ചെയ്തത്.
