കാർവക്രോൾ അഥവാ സൈമോഫെനോൾ C6H3CH3(OH)(C3H7) ഒരു മോണോറ്റെർപെനോയ്ഡ് ഫീനോൾ ആണ്. ഒരെഗാനോയുടെ തീക്ഷ്ണവും, ഊഷ്മളവും ആയ ഗന്ധം ഇതിന്റെ സവിശേഷതയാണ്.[3]

ഓറിഗാനം വൾഗേറിലെ (oregano), സുപ്രധാന ഓയിലിൽ കാർവാക്രോളിന്റെ സാന്നിധ്യമുണ്ട്. ഓയിൽ ഓഫ് തൈം, പെപ്പർവർട്ടിൽ നിന്നു ലഭിക്കുന്ന ഓയിൽ, വൈൽഡ് ബെഗാമോട്ട് എന്നിവയിൽ നിന്നും കാർവക്രോൾ ലഭിക്കുന്നു. തൈമിന്റെ സബ്സ്പീഷീസുകളിൽ 5 മുതൽ 75% വരെയും സറ്റ്യൂറെജയുടെ (savory) സബ്സ്പീഷീസുകളിൽ 1 മുതൽ 45% കാർവക്രോൾ അടങ്ങിയിരിക്കുന്നു.[4] ഒരിഗാനം മജോരാന (marjoram), ഡിറ്റനീ ഓഫ് ക്രറ്റെയിൽ എന്നിവയിൽ കാർവാക്രോൾ, യഥാക്രമം 50%, 60-80% അടങ്ങിയിരിക്കുന്നു.[5]
